Lightly fried tender smelt

Smelt is a kind of cute fish, shiny and always clean :D

For today's dinner, I lightly fried seasoned smelt, which tastes very tender and natural.

A package of smelt, rinsed and dried.

Season smelt with salt and let stand for 30 minutes.

Under low power, rub a slice of ginger root over the bottom of skillet (this can prevent smelt from sticking at the bottom). Brush oil evenly in the skillet. When the skillet is hot enough, place smelt in and fry until meat turns to white in color. Gently turn over smelt with silicon spatula. Drizzle lemon juice over smelt and let fry until the other side of smelt turns to white in color. Sprinkle chopped green onion, let cook until aroma develops.

Transfer smelt to a plate.

So delicious.
