Braised trout in soy sauce with sweet and sour taste




One slice of fish tail (about 1/3 of rainbow trout), cleaned and scaled.

Score lightly on both sides and marinate it with 1 tsp salt for 30 minutes.

Thinly slice a piece of ginger and finely chop green onion.

In a skillet, add some oil and let it evenly spread on the bottom, add ginger in, heat under low power.

When the skillet is very hot, add fish tail in, brown each side.

Sprinkle 2 tbsp sugar, 1 tbsp rice vinegar, 2 tbsp dark soy sauce and 4 tbsp water.

Cover the skillet, let cook under low power for 5 minutes or until fish is cooked through.

Remove cover, turn fish over with rubber spatula, let cook for another several minutes, so that the other side of fish can absorb the flavor.

Transfer fish to a plate.

Add chopped green onion, stir-fry under medium heat until aroma develops. Drizzle sauce on the fish tail.

Super easy sour and sweet pork rib



Pretty busy these days, well...unwilling to do too much cuisine after working.

However, I wish the simple cooking could give me delicious food, to comfort my starvation and fatigue.

Here they are -- sweet and sour pork rib!

Dice and rinse about 6 lb pork ribs, then put them in a 5 qt. pot;

Add water, the level of water is over ribs;

Cover pot, bring to boil under high power;

When it boils, remove foam with small size seive;

Add 2 white part of green onion, 2 star anises, 1 thick piece of ginger root and 1 tsp lemon juice, reduce heat to low, stew until ribs are cooked through.

The above procedures can be done after dinner, because stew is an easy job, with the timer ticking, you needn't attend too much, therefore, you can enjoy watching TV, reading newspaper or do whatever you want to relax.

Transfer cooked ribs to small containers (one container for two serves), strain broth through sieve to remove solid ingredients. Keep in the fridge.

Before cooking dinner, prepare sauce and finely chop green part of green onion.

For the content of sauce: blend 1 tbsp sugar, 1/2 tbsp rice vinegar, 1 tsp salt, 1 tbsp tapioca starch and 1/2 cup of broth or water.

Under high power, heat wok or skillet;

Add 1 tbsp oil into hot wok or skillet;

Stir-fry two serves of pork ribs until they are brown in color;

Stir in 1 tbsp dark soy sauce and blend well;

Stir in chopped green onion to develop aroma;

Pour sauce in, stir until condensed;

Voilà!

Very easy and very delicious.

Sweet and sour pork dices with peanut


I am very satisfied with my creation of this recipe -- a perfect mate for white rice.

(1) Dice boned pork chop into about 1.5 cm small cubes;

(2) Rinse and squeeze to remove water and blood as much as possible;

(3) Marinade dices with 1 tsp salt, a pinch of baking soda, a pinch of ground Sichuan pepper (optional), and 1 tsp dark soy sauce;

(4) Blend with 1 tbsp vegetable oil before cooked;

(5) Chop green onion;

(6) Prepare sauce: mix 1 tbsp tapioca starch, 1 tbsp rice vinegar, 2 tbsp sugar in 1/2 cup water;

(7) Under medium-high power, stir dices into hot wok;

(8) Reduce power to medium, cover and let cook (the moisture in dices can prevent them from sticking to the bottom when well-covered);

(9) Cook for five minutes or until they are cooked through;

(10) Remove cover, increase heat to high, blend in 1 tbsp dark soy sauce to produce nice color;

(11) Blend in chopped green onion, stir until aroma developed;

(12) Blend in 1/2 ~ 1 cup roasted peanut or cashew (depending on your taste);

(13) Pour sauce in, stir until it gets condensed;

(14) Transfer to the plate and serve immediately.

I like to blend it with white rice -- pork dices taste tender, the sweet and sour sauce provides marvelous flavor, peanut or cashew is more welcome than pork LOL.
